The Gaucho tradition meets the old Southwest in our Hatch Chile & Cheddar Beef Sausage made with 100% grass-fed beef. Much like the timeless ways we raise our cattle, Hatch chiles have been a crop in New Mexico for more than a century.
Grown in the Hatch Valley along the Rio Grande – where the terroir boosts the chiles’ flavor – they add a subtle taste that’s sweet, spicy and smoky all rolled into one sausage.
Slice and saute this spicy sausage as a side dish with scrambled eggs, plus a splash of hot sauce for an extra kick. Layer sausages on top of corn tortillas with chopped peppers, onions and extra cheddar, and bake in the oven for an easy lunch for a crowd.
