Cheesy Enchilada Bake: Cover a baking dish with a layer of enchilada sauce. Roll barbacoa and shredded cheese into tortillas, and top with more cheese and sauce. Bake until bubbly. 

 

Huevos Rancheros: Fry eggs over medium and add to a heated corn tortilla. Top with barbacoa shreds, black beans, and avocado.

 

Beefy Nachos: Add chips to a baking sheet. Top with cheddar, jalapeños, and barbacoa. Bake until cheese is melted, and top with sour cream, salsa, and cilantro.
