Teriyaki Beef with Smashed Cucumber Salad

There is something so delicious about the combination of sizzling hot beef with cool crunchy cucumbers. And don’t overlook the stress-relieving benefits smashing cucumbers at the end of a long day. Serve with Teriyaki beef to make a refreshing salad.
INGREDIENTS
Cucumber Salad
- 12 oz. baby cucumbers
- 1 tsp. sugar
- 1 tsp. salt
Cucumber Dressing
- 1 Tbsp. seasoned rice wine vinegar
- 2 tsp. avocado oil
- 1 tsp. sugar
- 1 tsp. soy sauce
- 1 tsp. sesame oil
- 1 tsp. toasted sesame seeds
- 1/4 tsp. garlic powder
- 1/4 tsp. or more crushed red pepper flakes
Base
DIRECTIONS
- Trim the ends of the cucumbers. Place on a cutting board and cover with plastic wrap. Use a rolling pin or meat mallet to smash cucumbers until slightly flattened.
- Cut or tear cucumbers into 1-inch pieces. Place in a colander over the sink and toss with 1 teaspoon sugar and salt. Allow to stand at least 30 minutes.
- Meanwhile, whisk together cucumber dressing ingredients.
- Toss drained cucumbers with dressing.
- Prepare steak strips on a pan or cast-iron skillet on the stove.
- Serve steak strips with cucumbers.
