No Bean BBQ Chili

This Keto-friendly meal is great for a weeknight dinner or for meal prepping. It is quick to throw together and the tangy BBQ adds a tasty element. 

 

Ingredients

  • 1 Tbsp. olive oil
  • 1 green bell pepper, chopped
  • 1 jalapeno, seeded and diced
  • 3 cloves garlic, minced
  • 1 (12 oz.) package Verde® Shredded Tangy BBQ
  • 1 (14.5 oz.) can diced tomatoes
  • 2 Tbsp. tomato paste
  • 1 (8 oz.) can tomato sauce
  • 1 (14.5 oz.) can beef broth
  • 2 Tbsp. chili powder
  • 1 tsp. oregano
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 avocado, chopped

 

Directions 

  • In a large pot over medium heat, add olive oil. Once warmed, add bell pepper, jalapeno, and garlic, sauté until slightly tender. Add shredded BBQ, diced tomatoes, tomato paste, tomato sauce, broth, chili powder, oregano, salt, and pepper.
  • Cook on low heat for 25-30 minutes, until juices have reduced and thickened. Remove beef and separate into shreds with forks, place back into the pot. 
  • Serve with avocado slices.
